A vegan diet is good for body and environment

Bravo to Riverbend High School freshman Sarah Keith for resolving to go vegan ["Veganism may be difficult to stomach," Jan. 1].

I went vegan more than 16 years ago, and it was the best decision I ever made. My health greatly improved when I stopped eating animal products, and I feel especially good knowing that my food choices don't harm animals or pollute the planet.

Vegan foods are cholesterol-free, low in saturated fat and calories, and high in fiber, complex carbohydrates, and other vital nutrients.

According to Dr. T. Colin Campbell, an internationally renowned nutrition expert, "The vast majority of all cancers, cardiovascular diseases, and other forms of degenerative illness can be prevented simply by adopting a plant-based diet."

Researchers at the University of Chicago have determined that switching to a vegan diet is more effective in countering global warming than switching from a standard American car to a Prius. It takes significantly less water, land, grain, fossil fuels, and other resources to produce a vegan diet than a meat-based one, and each vegan saves more than 100 animals every year.

And trust me, vegan foods are delicious and diverse. Most supermarkets and health-food stores carry an array of mock meats, non-dairy milks and frozen desserts, and other plant-based options.

Top of the food chain? Tell that to the lions and tigers and bears. Still not a good reason to treat others with disrespect, as in slaughterhouses and factory farms. It's the quality of life that counts, not the length. Taking a stand against animal testing does not infer an opposition to disease research, which can yield more accurate & effective results than vivisection. Why should a human who has no regard for other animals be entitled to more happiness than one who is at our mercy?

I agree with Clodius that health does not just come from eating leaves. I eat very few veggies and I'm healthier than some people I know. I eat very limited junk food. Meals center around a meat product and I have never had problems loosing weight when ever I have wanted. Exercise helped a lot with that, and limiting portion sizes. I tried the Veggitarian thing and I only got sick.

Does not purely come from eating leaves...it comes from exercise and a balanced diet...enjoy the CORRECT amounts of each food group and you will be in good health.

One day it was time for 7 y/o Sara's "pet" bunny to go...The next night at dinner her mom was wondering how things would go since Sara became so attached to bunny. But at dinner she announced, Bunny was a good pet - and she tastes good too!"
